Christmas Cookie Countdown and Chocolate Cherry Jumbles
During a trip last Fall to Pike’s Place Market in Seattle, I happened upon the Chukar Cherries stand and had a field day. Like a kid in a candy store, I had a hard time choosing one variety over the other – the options were endless. Although they sell other dried fruits and nuts, I was mostly intrigued with the cherries and ended up coming home with Rainier, Columbia River Tart, Chipotle Chocolate Covered, and one other kind that I ate right away but forgot what they were. I wish I would have bought loads more.
I tend to hoard food. No…not under my mattress, but in my pantry. When I come across new, unusual, or exotic food items, I bring them home and stash them away. There they sit, just waiting for me to come up with the perfect recipe or use for them. Dare I admit that from time to time, expiration dates pass and into the trash they go. As the saying goes – “the road to hell is paved with good intentions.” Heartbreaking to say the least. So as to insure that the last remaining bag of dried tart cherries I schlepped home from Seattle would not befall a trashy ending, I decided to use them in my countdown cookie recipe this week.
This cookie has it all going on – cocoa, white chocolate, pecans, and of course, tart cherries. A little something for everyone. And, they also lend themselves to modification. Pecans aren’t your thing? – sub in another nut. No white chocolate on hand?, chocolate chips would work just fine. Use your imagination and see what magic you can make. I tested these cookies with a store brand cocoa and also with a deep, dark, Valrhona cocoa from my local baking supply store. As expected, the Valrhona resulted in a deeper chocolate flavor – but the store brand also worked well and delivered a tasty cookie. Use up whatever cocoa you have on hand. That way you won’t have to “trash it” somewhere down the road.
Have fun with this cookie. The variations are endless. Although, I happen to think that cherries, white chocolate, and pecans make a perfect combination.
Chocolate Cherry Jumbles
1 1/2 cups all-purpose flour
1/2 cup cocoa powder (best quality possible)
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup (2 sticks) butter, at room temperature
1 cup packed dark brown sugar ( may substitute light brown sugar)
1 large egg
2 teaspoon vanilla extract
1/2 teaspoon almond extract
1 1/2 cups (6 ounces) chopped pecans
1 1/2 cups (6 ounces) dried tart or sour cherries
8 ounces top-quality white chocolate, chopped into approximately 1/4 – 1/2-sized pieces
Preheat oven to 350˚F. Line several baking sheets with parchment paper.
In a medium bowl, whisk together the flour, cocoa, baking powder, baking soda, and salt. Set aside
In the bowl of an electrice mixer on medium speed, or in a large bowl using a hand-held mixer, beat butter until lightened. Add the brown sugar and beat until combined, about 2 minutes. Add the egg, vanilla, and almond extract and beat until very light and fluffy, another minute or two. Beat in the flour mixture until evenly incorporated. Stir in the pecans, cherries, and white chocolate.
Drop the dough onto the baking sheets using a small scoop or a tablespoon, spacing about 2 inches apart.
Bake cookies, one sheet at a time, in the middle of the oven for 10 to 11 minutes. Do not over bake. The cookies will firm up as they cool. (It is a good idea to test a cookie to determine what works best in your oven.) Transfer the sheet to a cooling rack and let stand until the cookies firm up slightly, 2 to 3 minutes. Using a spatula, transfer cookies to the cooling rack to cool completely.
Yield: Approximately 4 dozen cookies

Thanks Jacob! You will appreciate that the black and white table fabric belonged to Grandma M. It is at least 40 years old. I nabbed it from her many years ago and have hung onto it waiting for the perfect way to use it. I think these photos honored it in a beautiful way.
