Dulce de Leche Cake and Happy New Year

"Dulce de Leche Cake Recipe"Yes, I realize I am nearly a week behind showing up here to wish everyone a Happy New Year.  Please, let me explain.  Christmas was fun and beautiful and filled with family and lots of food.  As we gathered together on Christmas Eve, I spent a moment taking stock of the beauty that surrounded me.  There were nearly 30 of us that gathered at my brother’s home and we celebrated well into the night, making it difficult for Santa to find just the right opportunity to drop in.  Fortunately, our children aren’t little anymore and so Christmas morning at my sister’s house took place closer to noon than those crazy morning hours of years gone by.  Following an extended gift opening session which always includes Becky’s hot chocolate to tide our stomachs over, we finally nourished ourselves with a mid-afternoon breakfast.  We never rush gift opening.  There are laughs galore, and usually a surprise – or joke – to be had.  Naps were in order before it all started again. Christmas Cookie Countdown and Spiced Rum Chocolate Cupcakes with Spiced Rum Buttercream

"Spiced Rum Chocolate Cupcakes with Spiced Rum Buttercream"Whew – the title of this post is a mouthful, isn’t it.  I just didn’t want to leave out any of the details describing this cupcake.

I’m fully aware that these cupcakes are cookie impostors but I don’t think you are going to mind.  Let me explain exactly how it is that I got around to this recipe and why it had to be a cupcake. Continue reading

Christmas Cookie Countdown and Gingerbread Cookies

"Gingerbread Cookie Recipe"I realize that my recent posts could be interpreted as more complaining rather than explaining the reasons I have been so busy that posting is presenting a challenge,  but honestly, I really am enjoying all the hubbub of Holidays.  There are so many necessary  – and very wonderful – things going on that require my attention that I am finding it difficult to post my final Christmas Cookie Countdown picks.  I’m actually typing this while flying home to spend Christmas with my family – proving my point that these are not ordinary days I find myself in. Christmas Cookie Countdown and Lime Meltaways

"Lime Meltaways Recipe"Remaining dedicated to my Christmas Cookie Countdown has proven to be a real challenge this week.  Is anyone else short on time during these days leading up to the Holidays, or is it just me?  I’ll admit that I am a rather poor time manager.  But, the days fly by and I feel as though I get little accomplished.  The sun comes up, and goes down again, leaving me wondering – what have I accomplished during the past fourteen hours.  Let’s take a closer look at today for example.  I was out of bed by 7:00 am.  I took an hour long walk.  I wrapped gifts, which I then took to the post office so that my daughter will have something to open during the eight nights of Hanukkah.  Back home again, I made a batch of gingerbread biscotti that were so bad they ended up in the trash.  Slip covers came off the sofa and into the washer, then back onto the sofa.  Another batch of cookies, which turned out beautifully and are the subject of today’s post.  Major Spring cleaning was performed in the living room before the decorating begins.  (I guess I was a few months behind on that one.)  Dinner – a girl needs to eat.  Then, another batch of cookies which are headed to the freezer for a party next week.  Ah, finally at 9:30, I get to sit down.  So – I don’t know if I manage my time poorly or if there just aren’t enough hours in a day to get it all done.  I want to think the latter. Warm Mocha Tart

"Warm Mocha Tart Recipe"
The turkeys have vanished and oversized pumpkins intended for carving are all but absent from the market bins.  Spiced Pumpkin Latte has been erased from the coffee shop blackboard and in its place, scribbled in candy cane letters, it now reads – Peppermint Mocha.  The fact that I have to take a breath when rattling off my coffee order to the barista would imply that I am one of those “complicated drink” people.  Not really.  It’s just that I want my humble little latte to be rich in flavor, easy on the low-fat milk, extra foam, and believe it or not – without caffeine.  I know, why bother, right?  Anyway, the other night, a friend and I decided to meet for an evening coffee.  With the barrage of Christmas lights, trees, and wreaths popping up everywhere, I was sporting a holiday mood.  Foregoing my “usual”, I ordered a Peppermint Mocha.  Of course, in fine-tuning it, I was still out of breathe when I had completed my order.  Nevertheless, I must say, my little drink was quite tasty and a welcome departure from my routine.
